Chicken Wraps

Chicken Wraps is a quick, easy meal that is great for those days when you've got so many assignments due you don't really have time to cook anything.


Ingredients:


  • 500g chicken, diced
  • Mexican Chilli Powder
  • Cumin Seeds
  • Cajun Seasoning 
(all spices from Masterfoods)

Ingredients for serving:


  • Mission Wraps - I use Wholemeal but there's about 6 different varieties. 
  • Lettuce
  • Carrot
  • Grated Cheese
  • Tomato 
  • Sour Cream 
  • Anything else you think would work in a wrap, go with what you love!



Method:

  1. Heat some oil in a frypan and add the chicken, and generous amounts of the three spices.  I don't weight out certain amounts and just pour until my hearts content, until you can really smell the spices.  You want enough to cover the chicken and add flavour.
  2. Cook the chicken until it is cooked through, then remove from heat and add to a serving bowl.
  3. Heat the wraps up for 30 seconds or so (depending on your microwave), then add the chicken and your selected ingredients, that's it!

Italian Meatballs

I realise that this is my third recipe, and not only that, it is the third recipe that has included pasta. Feeling that I'm almost going to have to rename my blog to 'Pasta Lover', because I realise we do eat a lot of pasta. However, I have this week's meals planned and pasta is only occurring once, other meals coming up include Chicken Wraps and a stir fry.

This recipe is for Italian Meatballs, and once again uses a Dolmio meal base because they are quick, easy and as my fiancé said 'why does this sauce taste so good?'.


Ingredients:

  • 1 Dolmio Italian Meatballs meal base
  • 350g mince
  • 1 egg
  • Approx half a cup of breadcrumbs, or as many as it takes for the meatballs to form together properly.
  • 125g pasta
  • 1 can diced tomatoes
  • 1 tablespoon canola oil (or whichever oil you prefer)

Steps:


  1. Put the mince, breadcrumbs and egg into a large bowl and mix with your hands, until it has blended together well. Also, put a pot on for pasta, and follow pasta packet instructions for cooking.
  2. Using your hands, roll the mince into balls, about the size of a ping-pong ball. Add more breadcrumbs if the mince is not holding together well.
  3. Add the oil and meatballs into a fry pan, and cook until the mince is browning, making sure you turn them over to prevent burning on one side.
  4. Once browned, add the Dolmio mix and the diced tomatoes, stirring.
  5. Leave to simmer for a few minutes, stir again, then remove from heat.
  6. Place cooked pasta in a dish then add meatballs mix onto the pasta.
  7. Top with cheese, I prefer grated tasty cheese, but other cheeses like parmesan would also work.


Note: When I made this meal I added a bit over the required amount of pasta and we were both able to have a decent sized amount for lunch the next day, so this is a great meal for leftovers and would be good for taking to work or uni and re-heating.
